These delicious croissant breakfast sandwiches are the perfect way to kickstart your day! Soft, flaky croissants are stuffed with gooey cheese, savory ham, crispy bacon, and perfectly scrambled eggs, all enhanced with a tangy Dijon mustard and honey spread.

For the Spread:
- 2 tablespoons Dijon mustard
- 2 tablespoons salted butter
- 2 tablespoons honey

For the Sandwiches:
- 4 large croissants
- 8 slices of cheese (Gouda, baby Swiss, cheddar, or your favorite)
- ½ pound deli-sliced ham
- 8 slices cooked bacon

For the Eggs:
- 5 large eggs
- Splash of milk
- Salt and pepper (to taste)
- 1 tablespoon butter
- Fresh chives (optional, for garnish)

Make the Dijon Honey Spread:
- In a small bowl, whisk together the Dijon mustard, salted butter, and honey until smooth. Set aside.

Prepare the Eggs:
- In a bowl, whisk together the 5 eggs, a splash of milk, salt, and pepper.
- Heat 1 tablespoon of butter in a non-stick skillet over medium heat. Once the butter is melted, pour in the egg mixture. Scramble the eggs gently with a spatula, cooking until they are just set. Remove from the heat and set aside.

Assemble the Sandwiches:
- Slice the croissants in half horizontally, but not all the way through.
- Spread a generous amount of the Dijon honey spread on the inside of each croissant.
- Place 2 slices of cheese on the bottom half of each croissant.
- Add a few slices of deli-sliced ham and 2 slices of cooked bacon on top of the cheese.
- Spoon a portion of scrambled eggs on top of the ham and bacon.
- Close the croissants to form the sandwich.

Toast the Sandwiches (Optional):
- For a crispy finish, melt 1 tablespoon of butter in a skillet over medium heat. Place the assembled croissant sandwiches in the skillet and cook for 2-3 minutes on each side, until the croissant is golden and the cheese is melted.

- Garnish with fresh chives (optional) and serve the croissant breakfast sandwiches hot.
Notes
- Feel free to substitute the ham with turkey, sausage, or bacon, depending on your preference.
- You can use any type of cheese that melts well for these sandwiches.
