Description

These Egg and Sausage Breakfast Taquitos are the perfect combination of scrambled eggs, savory sausage, and melty cheese all wrapped up in crispy corn tortillas. Ingredients

  • 1/2 lb breakfast sausage (or any ground sausage)

  • 6 large eggs

  • 1/4 cup milk

  • 1/2 cup shredded cheddar cheese (or your favorite cheese)

  • Salt and pepper, to taste

  • 10 small corn tortillas

  • 2 tablespoons vegetable oil (for frying)

  • Optional toppings: salsa, guacamole, sour cream, hot sauce


Instructions

  • Cook the Sausage:

    • In a large skillet, cook the sausage over medium heat, breaking it up into crumbles as it cooks. Cook until browned and fully cooked through. Once done, remove from the skillet and set aside.

  • Scramble the Eggs:

    • In a bowl, whisk together the eggs, milk, salt, and pepper.

    • In the same skillet, scramble the eggs over medium heat until fully cooked and no longer runny. Set aside.

  • Assemble the Taquitos:

    • Warm the tortillas by placing them in a dry skillet for about 30 seconds on each side, or microwave them for 10-15 seconds until soft and pliable.

    • Place about 2 tablespoons of cooked sausage and scrambled eggs on each tortilla, followed by a sprinkle of shredded cheese.

  • Roll the Taquitos:

    • Carefully roll each tortilla tightly around the filling to form a taquito. Secure the edge with a toothpick if needed.

  • Fry the Taquitos:

    • Heat the vegetable oil in a skillet over medium heat. Once hot, carefully add the taquitos seam-side down.

    • Fry the taquitos for 2-3 minutes on each side or until golden brown and crispy. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.

 

  • Serve:

    • Serve the taquitos warm with your favorite toppings, such as salsa, guacamole, or sour cream. Enjoy!

Notes

  • To make this recipe even quicker, you can use pre-cooked breakfast sausage or rotisserie chicken.

  • For a healthier version, you can bake the taquitos in the oven at 400°F (200°C) for 12-15 minutes, turning halfway through to ensure even crisping.
