Description

These English Muffin Breakfast Pizzas are the perfect way to start your day with a delicious and fun twist on a classic breakfast. With a crispy English muffin base, topped with savory eggs, cheese, and your choice of breakfast toppings, this recipe is both customizable and incredibly easy to make. Whether you’re feeding a crowd or enjoying a quick breakfast for yourself, these breakfast pizzas are sure to satisfy!


Ingredients

  • English muffins (split in half)

  • Eggs

  • Shredded cheddar cheese (or cheese of choice)

  • Cooked bacon, sausage, or ham (optional)

  • Diced bell peppers, onions, or tomatoes (optional)

  • Salt and pepper, to taste

  • Olive oil or butter for greasing

  • Fresh herbs (parsley, chives) for garnish (optional)


Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it.

  2. Split the English muffins in half and place them on the prepared baking sheet, cut-side up.

  3. Toast the muffins in the preheated oven for about 5-7 minutes, or until the edges are golden and slightly crispy.

  4. While the muffins are toasting, scramble or fry the eggs to your preference.

  5. Once the muffins are toasted, remove them from the oven and top each half with scrambled or fried eggs.

  6. Add your desired breakfast toppings, such as crumbled bacon, sausage, diced bell peppers, and cheese.

  7. Return the breakfast pizzas to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.

  8. Remove from the oven, season with salt and pepper to taste, and garnish with fresh herbs if desired.

  9. Serve warm and enjoy!

Notes

  • Feel free to use any combination of breakfast toppings you like, such as spinach, mushrooms, or avocado.

  • You can make these ahead of time by prepping the toppings and storing them in the fridge. Assemble and bake when ready to serve.

 

  • These breakfast pizzas are also great for meal prep! Make several at once and store them in the fridge for up to 2 days. Simply reheat in the oven.
