This Hash Brown Crust Bacon and Cheddar Quiche is the ultimate breakfast comfort food! A crispy golden crust made from shredded hash browns is filled with smoky bacon, sharp cheddar cheese, and a creamy egg custard. Perfect for brunch, holidays, or make-ahead breakfast — it’s hearty, satisfying, and always crowd-pleasing.

Ingredients

Scale

For the Hash Brown Crust:

  • 3 cups frozen shredded hash browns, thawed and squeezed dry

  • 2 tablespoons melted butter

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

For the Filling:

  • 6 large eggs

  • ¾ cup whole milk (or half and half for extra creaminess)

  • 1 cup cooked bacon, chopped (about 6 slices)

  • 1 cup shredded sharp cheddar cheese

  • ¼ teaspoon garlic powder

  • ¼ teaspoon onion powder

  • Salt and pepper, to taste

  • Optional: 2 tablespoons chopped chives or green onions

Instructions

  1. Preheat Oven:

    • Preheat your oven to 400°F (200°C).

  2. Make the Crust:

    • In a bowl, combine thawed hash browns, melted butter, salt, and pepper.

    • Press the mixture into a greased 9-inch pie dish, pressing up the sides to form a crust.

    • Bake for 20–25 minutes or until the edges are golden and starting to crisp.

  3. Prepare the Filling:

    • In a mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, and a pinch of salt and pepper.

    • Stir in cooked bacon, cheddar cheese, and chives (if using).

  4. Assemble the Quiche:

    • Pour the egg mixture into the pre-baked hash brown crust.

    • Return to the oven and bake for 30–35 minutes, or until the center is set and the top is lightly golden.

  5. Cool & Serve:

    • Let quiche rest for 5–10 minutes before slicing.

    • Serve warm or at room temperature.

Notes

  • Want to lighten it up? Use turkey bacon and low-fat milk.

  • Add veggies like spinach, mushrooms, or bell peppers for extra nutrition.

  • This quiche reheats well and can be made a day in advance.
