- 6 egg yolks
- 3/4 cup white sugar
- 2/3 cup milk
- 1 1/4 cups heavy cream
- 1/2 teaspoon vanilla extract
- 1 pound mascarpone cheese
- 1/4 cup strong brewed coffee, cooled
- 2 tablespoons rum
- 2 (3 ounce) packages ladyfinger cookies
- 1 tablespoon unsweetened cocoa powder
Instructions
- In a medium saucepan, whisk together egg yolks and sugar until well blended.
- Whisk in milk and cook over medium heat, stirring constantly, until the mixture reaches a gentle boil. Boil for 1 minute, then remove from heat and allow to cool slightly.
- Cover the mixture tightly and refrigerate for at least 1 hour.
- In a medium bowl, beat the heavy cream with vanilla extract until stiff peaks form.
- Once the egg mixture has cooled, fold in the mascarpone cheese until smooth and well combined.
- In a shallow dish, combine the cooled coffee and rum.
- Quickly dip each ladyfinger into the coffee mixture, making sure not to soak them too long. Arrange the dipped ladyfingers in the bottom of a 9×13-inch serving dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
- Cover and chill in the refrigerator for at least 4 hours, preferably overnight.
- Before serving, dust the top of the tiramisu with unsweetened cocoa powder.
- Serve chilled and enjoy!
Notes
- For a non-alcoholic version, omit the rum and use more coffee or a coffee substitute.
- You can prepare this dessert a day in advance for even better flavor as it allows the layers to meld together.
- Be sure not to soak the ladyfingers for too long as they should maintain some texture.
