- For the Banana Bread Cake:
- 2 ripe bananas, mashed
- 1/2 cup unsalted butter, melted
- 1 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup chopped walnuts (optional)
- For the Cream Cheese Frosting:
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a large bowl, mix together mashed bananas, melted butter, sugar, eggs, and vanilla extract.
- Add flour, baking soda, and salt to the banana mixture, stirring until just combined. Fold in chopped walnuts if desired.
- Pour batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the banana bread cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- For the frosting, beat together softened cream cheese, butter, powdered sugar, and vanilla extract until smooth and fluffy.
- Once the cake has cooled, spread the cream cheese frosting over the top. Slice and serve.
Notes
- Make sure the banana bread has cooled completely before applying the frosting to prevent it from melting.
- Walnuts are optional but add a nice crunch and flavor. You can also substitute them with pecans or chocolate chips.
