For the Dough:

  • 4 cups all-purpose flour

  • 2 ¼ tsp instant yeast (1 packet)

  • 1 cup whole milk, warm (about 110°F)

  • ¼ cup granulated sugar

  • 1 large egg

  • ¼ cup unsalted butter, melted

  • ½ tsp salt

For the Filling:

  • ½ cup unsalted butter, softened

  • ¾ cup brown sugar

  • 1 tbsp ground cinnamon

  • 6 slices thick-cut bacon, cooked and chopped

  • 2 tbsp bourbon (optional)

For the Maple Glaze:

  • 2 cups powdered sugar

  • ¼ cup pure maple syrup

  • 12 tbsp whole milk (as needed for consistency)

  • 1 tsp vanilla extract

  • 1 tsp maple extract (optional, for stronger maple flavor)

  • Pinch of salt

  • Extra chopped bacon for topping (optional)


Instructions

  1. Make the Dough:
    In a large bowl or stand mixer, combine warm milk, sugar, and yeast. Let sit for 5 minutes until foamy. Add egg, melted butter, and salt. Gradually add flour and mix until a soft dough forms. Knead for 5–7 minutes until smooth and elastic. Cover and let rise in a warm place until doubled in size (about 1 hour).

  2. Prepare the Filling:
    Mix softened butter, brown sugar, and cinnamon in a small bowl. Stir in bourbon if using. Set aside.

  3. Roll and Fill:
    Roll out dough into a large rectangle (~16×12 inches). Spread the filling evenly over the dough. Sprinkle chopped bacon over the filling. Roll up tightly from the long side and slice into 12 even rolls.

  4. Second Rise:
    Place rolls in a greased 9×13-inch baking dish. Cover and let rise for 30–40 minutes until puffy.

  5. Bake:
    Preheat oven to 350°F (175°C). Bake for 25–30 minutes or until golden brown and cooked through.

  6. Make the Glaze:
    In a bowl, whisk together powdered sugar, maple syrup, milk, vanilla, and maple extract until smooth. Add a pinch of salt to balance the sweetness.

  7. Glaze & Serve:
    Drizzle glaze over warm rolls and sprinkle with extra bacon if desired. Serve warm!

Notes

For make-ahead: Assemble rolls the night before, cover, and refrigerate. Let come to room temp and rise for 30–45 minutes before baking.

Use real maple syrup for best flavor—avoid pancake syrup substitutes.
