Ingredients

  • 1 cup chopped dates
  • 1 cup boiling water
  • 1 teaspoon baking soda
  • 1 cup sugar
  • 2 tablespoons butter
  • 1 egg
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts

Instructions

  • Preheat the oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  • In a small bowl, combine chopped dates and boiling water. Stir in baking soda and let stand for about 5 minutes.
  • In a large bowl, mix together sugar, butter, and egg until smooth and creamy. Stir in the date mixture.
  • In a separate bowl, whisk together flour, baking powder, and salt. Gradually add this to the date mixture, stirring just until combined.
  • Fold in the chopped walnuts.
  • Pour the batter into the prepared loaf pan and spread it evenly.
  • Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
