- 1/2 cup sugar
- 2 tablespoons all-purpose flour
- 1/4 cup cocoa powder
- 1/8 teaspoon salt
- 1 cup milk
- 4 egg yolks
- 1 teaspoon vanilla extract
- 4 egg whites
Instructions
- Preheat the oven to 350°F (175°C).
- In a saucepan, combine sugar, flour, cocoa powder, and salt. Gradually stir in milk.
- Cook and stir over medium heat until thickened and bubbly.
- Reduce heat; cook and stir for 2 minutes more.
- Remove from heat.
- In a small mixing bowl, beat egg yolks.
- Gradually stir about 1 cup of the hot mixture into the egg yolks.
- Return all to the saucepan; bring to a gentle boil.
- Cook and stir for 2 minutes more.
- Remove from heat and stir in vanilla extract.
- In a large mixing bowl, beat egg whites until stiff peaks form.
Notes
- Be sure to beat the egg whites until they form stiff peaks to help the soufflé rise.
- You can serve the soufflé immediately after baking for the best texture and presentation.
- If you want a more intense chocolate flavor, consider adding a few tablespoons of chocolate chips or melted chocolate to the mixture before adding the egg yolks.
