Ingredients

  • 1/2 cup sugar
  • 2 tablespoons all-purpose flour
  • 1/4 cup cocoa powder
  • 1/8 teaspoon salt
  • 1 cup milk
  • 4 egg yolks
  • 1 teaspoon vanilla extract
  • 4 egg whites

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a saucepan, combine sugar, flour, cocoa powder, and salt. Gradually stir in milk.
  • Cook and stir over medium heat until thickened and bubbly.
  • Reduce heat; cook and stir for 2 minutes more.
  • Remove from heat.
  • In a small mixing bowl, beat egg yolks.
  • Gradually stir about 1 cup of the hot mixture into the egg yolks.
  • Return all to the saucepan; bring to a gentle boil.
  • Cook and stir for 2 minutes more.
  • Remove from heat and stir in vanilla extract.
  • In a large mixing bowl, beat egg whites until stiff peaks form.

Notes

  • Be sure to beat the egg whites until they form stiff peaks to help the soufflé rise.
  • You can serve the soufflé immediately after baking for the best texture and presentation.
  • If you want a more intense chocolate flavor, consider adding a few tablespoons of chocolate chips or melted chocolate to the mixture before adding the egg yolks.
