Description

  • 2 cups fresh peaches, peeled and chopped (about 3 medium peaches)

  • 1 cup all-purpose flour

  • 1/2 cup brown sugar, packed

  • 1/2 cup unsalted butter, softened

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 cup sour cream

  • 1/4 cup milk

  • 1/2 teaspoon cinnamon (optional, for extra flavor)

  • 1 tablespoon granulated sugar (for sprinkling on top)


Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

  • In a medium bowl, cream together the butter and brown sugar until light and fluffy.

  • Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

  • In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon (if using).

  • Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream and milk. Start and end with the dry ingredients. Mix until just combined.

  • Gently fold in the chopped peaches.

  • Pour the batter into the prepared cake pan and smooth the top.

  • Sprinkle the top with granulated sugar for a sweet, slightly crunchy finish.

  • Bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.

 

  • Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Slice and enjoy!

Notes

  • You can use canned peaches in syrup, but fresh peaches are preferred for the best texture and flavor.

  • If you prefer a more intense peach flavor, feel free to add more peaches, or even make a peach compote to serve on top.
