Instructions

  1. Heat the Cream: In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer (do not let it come to a boil).

  2. Pour over Chocolate: Place the chocolate chips in a heatproof bowl. Once the cream is heated, pour it over the chocolate chips.

  3. Let It Sit: Let the mixture sit for 2-3 minutes to allow the chocolate chips to soften.

  4. Stir Until Smooth: Stir the mixture gently with a whisk or spoon until the chocolate is fully melted and the ganache is smooth and glossy.

  5. Cool or Use Immediately: You can use the ganache immediately as a drizzle, or let it cool for a few minutes for a thicker consistency. For whipped ganache, allow it to cool to room temperature and then whip it with a hand mixer until fluffy.

Notes

  • If you prefer a sweeter ganache, you can use milk chocolate chips instead of semisweet chocolate chips.

  • For a dairy-free version, substitute the heavy cream with coconut cream.

  • To make a thicker ganache for spreading, reduce the cream by about 2 tablespoons.
