Description

This classic divinity candy is light, fluffy, and melt-in-your-mouth sweet. With a perfect balance of sugar, egg whites, and a hint of vanilla, it’s a simple yet elegant treat for the holidays or any special occasion. Optionally, add some chopped nuts for extra texture and flavor.


Ingredients

  • 2 1/2 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1/2 cup water
  • 2 egg whites
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts (optional)

Instructions

  • In a saucepan, combine sugar, corn syrup, and water. Cook over medium heat, stirring constantly, until sugar dissolves.
  • Continue cooking, without stirring, until a candy thermometer reads 260°F (125°C).
  • In a separate bowl, beat egg whites until stiff peaks form.
  • Slowly pour the hot sugar mixture into the beaten egg whites, beating constantly.
  • Add vanilla extract and continue beating until the mixture holds its shape.
  • Fold in chopped nuts, if desired.
  • Drop by spoonfuls onto waxed paper and let cool completely before serving.

Notes

  • Be sure to monitor the temperature of the sugar syrup carefully, as reaching the correct temperature is crucial for getting the right texture.
  • If you prefer, you can add other flavorings like almond extract or fold in mini chocolate chips for variation.
