- 1 cup almond flour
- 1 3/4 cups powdered sugar
- 3 large egg whites (room temperature)
- 1/4 teaspoon cream of tartar
- 1/4 cup granulated sugar
- Food coloring (optional)
Instructions
- Preheat oven to 300°F (150°C) and line baking sheets with parchment paper.
- In a food processor, pulse almond flour and powdered sugar until combined. Sift the mixture into a large bowl.
- In a separate bowl, beat egg whites and cream of tartar until soft peaks form. Gradually add granulated sugar and continue beating until stiff peaks form.
- Gently fold the almond flour mixture into the egg white mixture until smooth. Add food coloring if desired.
- Transfer the batter to a piping bag fitted with a round tip. Pipe small circles (about 1.5 inches in diameter) onto the prepared baking sheets.
- Tap the baking sheets gently on the counter to release air bubbles. Let the macarons sit at room temperature for about 30 minutes to form a skin on top.
- Bake for 18-20 minutes, or until the macarons are set and easily lift off the parchment paper. Let cool completely before filling with your favorite filling (such as buttercream, ganache, or jam).
Notes
- Be sure to let the macarons rest before baking so they can form the characteristic “foot” on the bottom.
- The almond flour should be finely ground and sifted to ensure smooth, delicate macarons.
- You can fill these with a variety of fillings such as chocolate ganache, fruit preserves, or flavored buttercream.
