Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup unsweetened cocoa powder
  • 3/4 cup sugar
  • 1/2 cup vegetable oil
  • 1/2 cup buttermilk
  • 1 large egg
  • 1 tablespoon green food coloring
  • 1/2 teaspoon white vinegar
  • 1/2 teaspoon vanilla extract

Instructions

  • Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  • In a medium bowl, whisk together the flour, baking soda, salt, and cocoa powder.
  • In a separate bowl, mix the sugar, vegetable oil, buttermilk, egg, green food coloring, vinegar, and vanilla extract until smooth.
  • Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
  • Spoon the batter into the prepared cupcake liners, filling each about 2/3 full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cupcakes cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
  • Frost with cream cheese frosting or your favorite frosting and enjoy!

Notes

  • If you prefer a darker green color, you can add more food coloring.
