Description

These Lemon Blueberry Cheesecake Parfaits are a refreshing, indulgent dessert, with layers of creamy cheesecake filling, sweet blueberries, and a crunchy graham cracker crust. Perfectly balanced with a hint of lemon and fresh fruit, these parfaits are an easy and elegant treat!


Ingredients

  • 1 cup graham cracker crumbs
  • 2 tbsp sugar
  • 4 tbsp butter, melted
  • 1 cup blueberries
  • 1 tbsp sugar
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup whipped cream

Instructions

  • In a small bowl, combine graham cracker crumbs, 2 tbsp sugar, and melted butter. Mix well.
  • In another bowl, toss blueberries with 1 tbsp sugar until coated.
  • In a separate bowl, beat cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until well combined.
  • Gently fold in whipped cream to the cream cheese mixture.
  • To assemble, layer graham cracker crumbs, cream cheese mixture, and blueberries in serving glasses.
  • Repeat layers for desired amount of parfaits.
  • Chill in the refrigerator for at least 1 hour before serving

Notes

  • You can add a squeeze of fresh lemon juice to the cream cheese mixture for a tangy kick.
