Description

  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 cup lemon juice (freshly squeezed is best)
  • Zest of 1 lemon (optional, for extra citrus flavor)
  • Powdered sugar (for dusting, optional)

Instructions

  • Prepare the Base:
    Preheat your oven to 350°F (175°C).
    In a medium bowl, combine the flour, sugar, and salt. Stir to combine.
    Add in the melted butter (or mix in cold butter to create a crumbly texture). Press this mixture into the bottom of a greased 9×9-inch baking pan, spreading it evenly to form the base.
    Bake in the preheated oven for 15 minutes, or until the base is lightly golden.
  • Prepare the Lemon Filling:
    While the base is baking, whisk together the eggs, granulated sugar, flour, baking powder, and lemon juice in a separate bowl. If using, add in the lemon zest for an extra burst of flavor.
    Once the base is done baking, pour the lemon filling mixture over the hot crust.
