Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Prepare the cream cheese filling: In a bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth. Set aside.
- Make the dough: In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. In a separate bowl, cream the butter and sugar until light and fluffy. Add the egg, vanilla extract, red food coloring, and buttermilk, mixing until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Assemble the cookies: Roll the dough into balls (about 1 tablespoon of dough). Press a small amount of the cream cheese filling into the center of each dough ball, then cover it with more dough, sealing the filling inside.
- Bake for 10-12 minutes, or until the edges of the cookies are set, but the centers are soft. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
