Description

A zesty and sweet dessert that combines the rich flavors of lemon and buttery cobbler. This easy-to-make recipe features a magical transformation as the ingredients come together to create a delightful lemony treat.


Ingredients

  • ½ cup (1 stick) butter
  • 1 cup flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup sugar
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract

 

  • 21-ounce can lemon pie filling

Instructions

  • Preheat your oven to 350°F (175°C).
  • Melt the butter in a baking dish (9×9 or similar) in the oven while it preheats.
  • In a separate bowl, mix the flour, baking powder, salt, and sugar.
  • Stir in the buttermilk, vanilla extract, and lemon extract until combined.
  • Once the butter is melted, pour the batter into the baking dish over the butter, but do not stir.
  • Spoon the lemon pie filling evenly over the top. Do not stir.
  • Bake for 45-50 minutes, until the cobbler is golden brown on top.

 

  • Allow to cool slightly before serving. Enjoy warm with a scoop of ice cream if desired.

Notes

  • This dessert has a “magical” quality where the ingredients separate into a cobbler topping and a lemony filling while baking.

 

  • You can substitute regular lemon juice for lemon extract if needed, but the lemon extract will give a more intense flavor.
