- 1 cup flour
- 1 ½ teaspoons baking powder
- ¼ teaspoon salt
- 1 cup sugar
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 1 teaspoon lemon extract
- 21-ounce can lemon pie filling
Instructions
- Preheat your oven to 350°F (175°C).
- Melt the butter in a baking dish (9×9 or similar) in the oven while it preheats.
- In a separate bowl, mix the flour, baking powder, salt, and sugar.
- Stir in the buttermilk, vanilla extract, and lemon extract until combined.
- Once the butter is melted, pour the batter into the baking dish over the butter, but do not stir.
- Spoon the lemon pie filling evenly over the top. Do not stir.
- Bake for 45-50 minutes, until the cobbler is golden brown on top.
- Allow to cool slightly before serving. Enjoy warm with a scoop of ice cream if desired.
