Instructions
- In a medium bowl, mix together the Oreo cookie crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a large bowl, beat the cream cheese until smooth. Add the sugar and vanilla extract, and mix until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
- Fold in the crushed Oreo cookies.
- Pour the mixture over the prepared crust and smooth the top with a spatula.
- Refrigerate for at least 4 hours, or until set.
