Instructions
- Preheat your oven to 350°F (175°C).
- In a blender or food processor, puree the cooked pinto beans until smooth.
- In a large mixing bowl, whisk together the sugar, eggs, melted butter, vanilla extract, milk, cornstarch, cinnamon, and nutmeg.
- Add the pureed pinto beans to the mixture and stir until well combined.
- Pour the bean mixture into the prepared pie crust and spread it evenly.
