Description

Snickerdoodle Cobbler combines the warm, comforting flavors of a snickerdoodle cookie with the indulgent, gooey texture of a cobbler. This dessert is rich and sweet, with a spiced cinnamon flavor that melts into a deliciously soft and slightly crispy topping. The warm cobbler is topped with a cinnamon-sugar crust that’s perfect for cozy nights and family gatherings.

For the Cobbler:

  • 1/3 cup unsalted butter, melted

  • 3/4 cup whole milk

  • 2 teaspoons vanilla extract

  • 1 1/2 cups sugar

  • 1 1/2 cups all-purpose flour

  • 2 1/4 teaspoons baking powder

  • 3/4 teaspoon salt

  • 2 teaspoons cinnamon

  • 1 1/2 cups packed brown sugar

  • 1 1/2 cups hot water

For the Topping:

  • 1/4 cup sugar

  • 1/2 teaspoon cinnamon


Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish.

  • In a large bowl, mix together the melted butter, whole milk, and vanilla extract.

  • In another bowl, whisk together the sugar, flour, baking powder, salt, and cinnamon.

  • Add the dry ingredients to the wet ingredients and stir until combined. The batter will be thick.

  • Pour the batter into the prepared baking dish, spreading it evenly.

  • In a separate small bowl, mix together the brown sugar and hot water. Pour the hot sugar-water mixture over the batter in the baking dish. Do not stir.

  • In a small bowl, combine the topping sugar and cinnamon. Sprinkle this mixture evenly over the top of the cobbler.

  • Bake for 45-50 minutes, or until the cobbler is golden brown and bubbly.

 

  • Let it cool slightly before serving. Enjoy warm with vanilla ice cream or whipped cream for an extra treat!

Notes

  • The cobbler will have a layer of liquid at the bottom that transforms into a sweet syrup as it bakes.

 

  • You can use any type of milk (or non-dairy milk) in this recipe, though whole milk provides the richest flavor.
