Description

This Snickerdoodle Cobbler combines the rich, warm flavors of cinnamon and sugar in a cozy, comforting dessert. With a soft, cake-like base and a gooey cinnamon-sugar topping, this easy cobbler will melt in your mouth and become a family favorite!

For the Cobbler

  • 1/3 cup unsalted butter, melted
  • 3/4 cup whole milk
  • 2 teaspoons vanilla extract
  • 1 1/2 cups sugar
  • 1 1/2 cups flour
  • 2 1/4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 1/2 cups brown sugar, packed
  • 1 1/2 cups hot water

For the Topping

 

  • 1/4 cup sugar
  • 1/2 teaspoon cinnamon

Instructions

  • Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or similar-sized dish.
  • Make the cobbler batter:
    • In a large mixing bowl, whisk together the melted butter, milk, and vanilla extract.
    • Add the sugar, flour, baking powder, salt, and cinnamon. Stir until just combined and a thick batter forms.
  • Assemble the cobbler:
    • Pour the batter into the prepared baking dish and spread it evenly.
  • Prepare the topping:
    • In a small bowl, mix together the brown sugar, hot water, and the remaining 1/4 cup of sugar and 1/2 teaspoon cinnamon. Pour this mixture evenly over the batter in the baking dish (it will seem watery, but that’s okay!).
  • Bake the cobbler:
    • Bake for 45-50 minutes, or until the cobbler is golden brown on top and the center is bubbly. The sauce will bubble up through the cobbler, creating a deliciously gooey layer beneath the cake-like topping.

 

  • Serve: Let the cobbler cool for 10 minutes before serving. Enjoy warm, with a scoop of vanilla ice cream if desired!

Notes

  • For a more intense cinnamon flavor, you can increase the cinnamon in the batter or topping by an extra 1/2 teaspoon.
  • This dessert can be served as-is, or topped with whipped cream or vanilla ice cream for extra indulgence.
