For the Cobbler
- 1/3 cup unsalted butter, melted
- 3/4 cup whole milk
- 2 teaspoons vanilla extract
- 1 1/2 cups sugar
- 1 1/2 cups flour
- 2 1/4 teaspoons baking powder

- 2 teaspoons cinnamon
- 1 1/2 cups brown sugar, packed
- 1 1/2 cups hot water

- 1/4 cup sugar
- 1/2 teaspoon cinnamon
Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or similar-sized dish.
- Make the cobbler batter:
- In a large mixing bowl, whisk together the melted butter, milk, and vanilla extract.
- Add the sugar, flour, baking powder, salt, and cinnamon. Stir until just combined and a thick batter forms.
- Assemble the cobbler:
- Pour the batter into the prepared baking dish and spread it evenly.
- Prepare the topping:
- In a small bowl, mix together the brown sugar, hot water, and the remaining 1/4 cup of sugar and 1/2 teaspoon cinnamon. Pour this mixture evenly over the batter in the baking dish (it will seem watery, but that’s okay!).
- Bake the cobbler:
- Bake for 45-50 minutes, or until the cobbler is golden brown on top and the center is bubbly. The sauce will bubble up through the cobbler, creating a deliciously gooey layer beneath the cake-like topping.
- Serve: Let the cobbler cool for 10 minutes before serving. Enjoy warm, with a scoop of vanilla ice cream if desired!
