Description

These Strawberry Cheesecake Cookies combine the rich, creamy flavor of cheesecake with the sweet freshness of strawberries. Soft, chewy, and bursting with strawberry goodness, these cookies are a perfect treat for any occasion. The cream cheese gives them a melt-in-your-mouth texture, while the strawberry puree adds a vibrant and fruity twist!

  • 1/2 cup unsalted butter, softened
  • 4 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup strawberry puree
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 tsp salt
  • 1/4 cup powdered sugar (for rolling)

Instructions

  • In a large mixing bowl, cream together the softened butter and cream cheese until smooth and fluffy.
  • Add the granulated sugar, strawberry puree, and vanilla extract. Mix until fully combined.
  • Gradually add the flour and salt, mixing until a dough forms. If the dough is too sticky, you can add a bit more flour until it’s manageable.
  • Cover the dough with plastic wrap and refrigerate for at least 1 hour to firm up.
  • Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.
  • Scoop tablespoon-sized balls of dough and roll them in powdered sugar to coat. Place them on the prepared baking sheet, spaced about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • You can add extra strawberry pieces or a few white chocolate chips for added texture and flavor.
  • If you prefer a more pronounced strawberry flavor, try using freeze-dried strawberry powder in place of the puree.
  • For a different touch, you can drizzle melted white chocolate over the cookies once they’ve cooled.
