- 1/2 cup unsalted butter, softened
- 4 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1/4 cup strawberry puree
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/4 tsp salt
- 1/4 cup powdered sugar (for rolling)
Instructions
- In a large mixing bowl, cream together the softened butter and cream cheese until smooth and fluffy.
- Add the granulated sugar, strawberry puree, and vanilla extract. Mix until fully combined.
- Gradually add the flour and salt, mixing until a dough forms. If the dough is too sticky, you can add a bit more flour until it’s manageable.
- Cover the dough with plastic wrap and refrigerate for at least 1 hour to firm up.
- Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.
- Scoop tablespoon-sized balls of dough and roll them in powdered sugar to coat. Place them on the prepared baking sheet, spaced about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
- You can add extra strawberry pieces or a few white chocolate chips for added texture and flavor.
- If you prefer a more pronounced strawberry flavor, try using freeze-dried strawberry powder in place of the puree.
- For a different touch, you can drizzle melted white chocolate over the cookies once they’ve cooled.
