Description

This Sugar Cookie Cheesecake combines the sweetness of a sugar cookie crust with a rich, creamy cheesecake filling. Topped with a luscious layer of frosting and sprinkles, this dessert is perfect for any celebration or as a treat for anyone with a sweet tooth. It’s a delightful fusion of two classic favorites: sugar cookies and cheesecake!

Ingredients

Scale
  • For the Sugar Cookie Crust:

    • 1 package (16.5 oz) refrigerated sugar cookie dough

    • 1/4 cup all-purpose flour (for dusting)

  • For the Cheesecake Filling:

    • 3 (8 oz) packages cream cheese, softened

    • 1 cup granulated sugar

    • 1 teaspoon vanilla extract

    • 3 large eggs

    • 1/4 cup sour cream

    • 1/4 cup heavy cream

    • 1 tablespoon all-purpose flour

  • For the Topping:

    • 1 cup whipped cream

    • Sprinkles (optional, for decoration)

Instructions

  • Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and lightly flour the sides.

  • Press the sugar cookie dough evenly into the bottom of the pan to form the crust. Use your fingers or a spoon to smooth it out, covering the entire base. Bake for 12-15 minutes or until golden brown. Let it cool while you prepare the filling.

  • In a large bowl, beat the softened cream cheese and sugar until smooth and creamy. Add the vanilla extract and mix again.

  • Add the eggs, one at a time, beating after each addition. Stir in the sour cream, heavy cream, and flour. Mix until fully combined.

  • Pour the cheesecake filling over the cooled sugar cookie crust. Smooth the top with a spatula.

  • Bake for 45-50 minutes or until the center is set and slightly jiggles. The edges should be firm and golden brown.

  • Turn off the oven and let the cheesecake cool in the oven with the door slightly open for about 1 hour.

  • After the cheesecake has cooled, refrigerate it for at least 4 hours or overnight for best results.

  • Once chilled, top the cheesecake with whipped cream and sprinkles before serving.

Notes

  • To make the cheesecake extra creamy, ensure the cream cheese is fully softened before mixing.

  • If you prefer a thicker cheesecake, you can increase the baking time slightly, but be careful not to overbake.

  • You can substitute the whipped cream with frosting for a richer topping.

  • This dessert can be stored in the refrigerator for up to 4 days.
