Instructions

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

Make the cookie dough: In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

In a large bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy.

Add the egg, vanilla extract, and sour cream, mixing until combined.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the crushed freeze-dried strawberries (or fresh chopped strawberries) until evenly distributed.

Make the cheesecake filling: In a small bowl, beat the softened cream cheese, powdered sugar, vanilla extract, and sour cream until smooth and creamy.

Drop spoonfuls of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.

Use your thumb to make a small indentation in the center of each cookie.

Spoon a small amount of the cheesecake filling into the indentation of each cookie.

Notes
