Ingredients
-
2 1/4 cups all-purpose flour
-
1 tsp baking soda
-
1/2 tsp salt
-
1/2 cup unsalted butter, softened
-
1 cup granulated sugar
-
1/2 cup brown sugar, packed
-
2 large eggs
-
1 tsp vanilla extract
-
1 tbsp instant coffee granules (or espresso powder)
-
1 tbsp warm water
-
1/2 cup mascarpone cheese
-
1/2 tsp ground cinnamon
-
1/4 cup cocoa powder (for dusting)
-
1/4 cup dark chocolate chips (optional, for added richness)
Instructions
-
Prepare the Coffee Mixture:
-
In a small bowl, dissolve the instant coffee granules (or espresso powder) in 1 tablespoon of warm water. Set aside to cool.
-
-
Make the Cookie Dough:
-
Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
-
In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
-
In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy (about 2-3 minutes).
-
Add the eggs, one at a time, and mix in the vanilla extract and cooled coffee mixture.
-
Gradually add the dry ingredients to the wet ingredients, mixing just until combined. If using, fold in the mascarpone cheese and dark chocolate chips.
-
-
Form and Bake the Cookies:
-
Drop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
-
Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set. The cookies should be soft but firm up as they cool.
-
Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
-
-
Dust with Cocoa Powder:
-
Once the cookies are fully cooled, sift a light dusting of cocoa powder over the top of each cookie to mimic the traditional tiramisu topping.
-
-
Serve and Enjoy:
-
Serve your Tiramisu Cookies with a cup of coffee or espresso for the full tiramisu experience!
-
Notes
-
For a more intense coffee flavor, you can increase the amount of coffee granules or add a tablespoon of coffee liqueur (like Kahlúa) to the dough.
-
If you prefer a more traditional tiramisu flavor, consider adding a small amount of mascarpone filling between two cookies to make a “sandwich.”
