Description

These Tiramisu Cookies are a delightful fusion of two beloved desserts: tiramisu and cookies. Soft and pillowy, these cookies are infused with the classic flavors of coffee, mascarpone, and cocoa, with a hint of vanilla. Ingredients

  • 2 1/4 cups all-purpose flour

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1/2 cup unsalted butter, softened

  • 1 cup granulated sugar

  • 1/2 cup brown sugar, packed

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1 tbsp instant coffee granules (or espresso powder)

  • 1 tbsp warm water

  • 1/2 cup mascarpone cheese

  • 1/2 tsp ground cinnamon

  • 1/4 cup cocoa powder (for dusting)

  • 1/4 cup dark chocolate chips (optional, for added richness)


Instructions

  • Prepare the Coffee Mixture:

    • In a small bowl, dissolve the instant coffee granules (or espresso powder) in 1 tablespoon of warm water. Set aside to cool.

  • Make the Cookie Dough:

    • Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.

    • In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.

    • In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy (about 2-3 minutes).

    • Add the eggs, one at a time, and mix in the vanilla extract and cooled coffee mixture.

    • Gradually add the dry ingredients to the wet ingredients, mixing just until combined. If using, fold in the mascarpone cheese and dark chocolate chips.

  • Form and Bake the Cookies:

    • Drop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.

    • Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set. The cookies should be soft but firm up as they cool.

    • Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

  • Dust with Cocoa Powder:

    • Once the cookies are fully cooled, sift a light dusting of cocoa powder over the top of each cookie to mimic the traditional tiramisu topping.

Notes
