Description

Amish Harvest Casserole is a hearty, down-home dish loaded with savory ground beef, tender vegetables, and a cozy blend of potatoes and pasta in a creamy tomato sauce. It’s the ultimate one-dish wonder—perfect for fall evenings, potlucks, or feeding a hungry crowd with comforting, old-fashioned flavor.


Ingredients

  • 1 lb ground beef or ground turkey

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 1 cup carrots, diced

  • 1 cup celery, chopped

  • 1 cup potatoes, peeled and diced

  • 1 cup uncooked elbow macaroni or small pasta

  • 1 (14.5 oz) can diced tomatoes, undrained

  • 1 (10.5 oz) can cream of mushroom soup (or cream of celery)

  • ½ cup milk

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp dried thyme

  • ½ tsp paprika

  • 1 cup shredded cheddar cheese (optional, for topping)

  • Chopped parsley, for garnish (optional)


Instructions

  • Preheat oven to 375°F (190°C). Grease a 9×13-inch casserole dish.

  • Brown the meat: In a large skillet, cook ground beef over medium heat until no longer pink. Add diced onion and garlic, and sauté for 2–3 minutes until softened.

  • Add veggies: Stir in carrots, celery, and potatoes. Cook for another 5 minutes to start softening the vegetables.

  • Make the sauce: Add in the diced tomatoes, cream of mushroom soup, milk, salt, pepper, thyme, and paprika. Mix well and let it simmer for a couple minutes.

  • Combine with pasta: Stir in the uncooked macaroni and mix everything until well combined.

  • Bake: Pour the mixture into the prepared casserole dish. Cover with foil and bake for 45 minutes, or until pasta and potatoes are tender.

  • Optional cheese topping: Uncover, sprinkle with shredded cheddar cheese, and return to the oven for another 10 minutes until bubbly and golden.

 

  • Serve warm, garnished with chopped parsley if desired.

Notes

  • Make it vegetarian by swapping the meat with lentils or extra mushrooms.

  • Add frozen peas or corn for more veggie variety.

  • Can be made ahead—assemble, refrigerate, and bake when ready.
