1 cup potatoes, peeled and diced

1 cup uncooked elbow macaroni or small pasta

1 (14.5 oz) can diced tomatoes, undrained

1 (10.5 oz) can cream of mushroom soup (or cream of celery)

½ cup milk

1 tsp salt

½ tsp black pepper

1 tsp dried thyme

½ tsp paprika

1 cup shredded cheddar cheese (optional, for topping)

Instructions

Preheat oven to 375°F (190°C). Grease a 9×13-inch casserole dish.

Brown the meat: In a large skillet, cook ground beef over medium heat until no longer pink. Add diced onion and garlic, and sauté for 2–3 minutes until softened.

Add veggies: Stir in carrots, celery, and potatoes. Cook for another 5 minutes to start softening the vegetables.

Make the sauce: Add in the diced tomatoes, cream of mushroom soup, milk, salt, pepper, thyme, and paprika. Mix well and let it simmer for a couple minutes.
