Description

Angel Chicken Rice is a creamy, cheesy comfort food dish that’s as easy as it is delicious! Tender chicken, fluffy rice, and a rich blend of cream cheese, butter, and Colby Jack cheese come together in a perfect one-pan meal. A quick, family-friendly dinner that will have everyone coming back for more!


Ingredients

  • 3 cups cooked chicken, diced or shredded
  • 3 cups cooked rice
  • ½ cup butter, room temperature and cubed
  • 8 ounces cream cheese, room temperature and cubed
  • 10.5 ounces cream of chicken soup
  • 3 cloves garlic, minced
  • 0.7 ounce Italian dressing mix (I used Good Seasons)
  • 1 cup chicken stock
  • 2 cups shredded Colby Jack cheese, divided
  • Salt and pepper to taste

 

  • Fresh parsley for garnish

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the cooked chicken and cooked rice.
  • In a separate bowl, mix together the butter, cream cheese, cream of chicken soup, garlic, and Italian dressing mix. Stir in the chicken stock until smooth.
  • Pour the cream cheese mixture over the chicken and rice, stirring to combine.
  • Add 1½ cups of shredded Colby Jack cheese and mix until incorporated.
  • Transfer the mixture to a greased 9×13-inch baking dish. Top with the remaining ½ cup of shredded cheese.
  • Bake uncovered for 25-30 minutes, or until the casserole is bubbly and the cheese is melted and golden.

 

  • Garnish with fresh parsley before serving.

Notes

  • You can substitute the Colby Jack cheese with other cheeses like cheddar or mozzarella, depending on your preference.
  • For a little extra flavor, you can add some sautéed onions or vegetables to the mixture before baking.

 

  • You can make this dish ahead of time and refrigerate it for up to a day before baking. Just add a few extra minutes to the cooking time if baking from cold.
