Description

These BBQ Beer-Marinated Chicken Skewers are smoky, juicy, and full of mouthwatering flavor. For the marinade:

  • 1 cup beer (lager or pale ale works great)

  • ¼ cup olive oil

  • 3 tbsp soy sauce

  • 2 tbsp brown sugar

  • 2 tbsp Dijon mustard

  • 1 tbsp Worcestershire sauce

  • 3 cloves garlic, minced

  • 1 tsp smoked paprika

  • ½ tsp black pepper

  • ½ tsp salt

For the skewers:

  • 1.52 lbs boneless, skinless chicken breasts or thighs, cut into 1.5-inch chunks

  • ½ cup BBQ sauce (for basting)

  • Skewers (wooden or metal)

  • Optional: red onion, bell pepper, or pineapple chunks for layering


Instructions

  • Make the marinade:
    In a large bowl or zip-top bag, whisk together beer, olive oil, soy sauce, brown sugar, mustard, Worcestershire, garlic, paprika, salt, and pepper.

  • Marinate the chicken:
    Add the chicken chunks to the marinade. Cover and refrigerate for at least 2 hours, preferably overnight for max flavor.

  • Prep the grill & skewers:
    If using wooden skewers, soak them in water for 30 minutes to prevent burning. Preheat your grill to medium-high heat.

  • Assemble the skewers:
    Thread the marinated chicken onto skewers, alternating with veggies or pineapple if using.

  • Grill the skewers:
    Place skewers on the grill and cook for 10–12 minutes, turning occasionally, until chicken is cooked through and nicely charred.

  • Baste with BBQ sauce:
    In the final few minutes, brush chicken generously with BBQ sauce and grill until caramelized.

 

  • Serve hot:
    Remove from grill, let rest a few minutes, then serve with extra sauce on the side if desired.

Notes

  • Any beer will work, but lagers or pale ales give the best flavor balance.

  • Want it spicy? Add a pinch of cayenne or hot sauce to the marinade.

  • Great with grilled corn, potato salad, or coleslaw on the side.

  • Leftovers make awesome wraps or salads!
