Ingredients

  • 1 lb. ground beef

  • 1 tablespoon olive oil

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 1 can (14.5 oz) diced tomatoes, drained

  • 1 cup beef broth

  • 2 cups uncooked pasta (penne or elbow macaroni work best)

  • 1 teaspoon Italian seasoning

  • Salt and pepper, to taste

  • 2 cups shredded cheese (cheddar or mozzarella)

  • Fresh parsley or basil for garnish (optional)


Instructions

  • Heat olive oil in a large skillet over medium-high heat.

  • Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through. Drain excess fat if necessary.

  • Add the diced onion and garlic to the pan, cooking for another 2-3 minutes until softened and fragrant.

  • Stir in the diced tomatoes, beef broth, uncooked pasta, and Italian seasoning. Bring to a simmer.

  • Cover and cook for 10-12 minutes, stirring occasionally, until the pasta is tender and the liquid is mostly absorbed.

  • Stir in the shredded cheese, then cover the skillet again for a couple of minutes to allow the cheese to melt.

  • Season with salt and pepper to taste, and garnish with fresh parsley or basil if desired.

Notes

free to use a combination of cheeses like cheddar, mozzarella, or even a bit of parmesan for extra flavor.

You can swap the ground beef for turkey or chicken for a leaner option.

If you prefer a creamier texture, add a splash of heavy cream or milk along with the broth.
