  • 1 lb boneless, skinless chicken breasts
  • 1 cup bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs
  • 2 tbsp olive oil
  • 8 oz pasta
  • 1 cup heavy cream

Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  • Cut the chicken breasts into bite-sized pieces.
  • In a shallow dish, combine bread crumbs, grated Parmesan cheese, garlic powder, salt, and black pepper.
  • In another shallow dish, beat the eggs.
  • Dip each chicken piece into the egg, then coat it in the breadcrumb mixture, pressing gently to ensure it sticks. Place the breaded chicken on the prepared baking sheet.
  • Heat olive oil in a large skillet over medium heat. Once hot, add the breaded chicken pieces and cook until golden and crispy on all sides, about 5-6 minutes. Transfer the chicken to a plate and set aside.
  • While the chicken cooks, bring a large pot of salted water to a boil. Cook the pasta according to the package directions. Drain and set aside.
  • In the same skillet used for the chicken, pour in the heavy cream and bring to a simmer over medium heat. Stir frequently until the cream thickens slightly, about 3-4 minutes.
  • Add the cooked pasta to the skillet, tossing it to coat in the creamy sauce. Season with additional salt and pepper if needed.
  • Serve the creamy Parmesan pasta topped with the crispy chicken bites. Garnish with extra Parmesan if desired.

Notes

  • For a lighter version, you can use whole wheat breadcrumbs and low-fat cream.
  • Feel free to add some steamed broccoli or spinach to the pasta for extra veggies.
