- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1/2 cup all-purpose flour
- 4 tablespoons butter
- 4 tablespoons olive oil
- 2 cups sliced mushrooms
- 1/2 cup Marsala wine
- 1/2 cup chicken broth
Instructions
- Season chicken breasts with salt and pepper, then dredge in flour.
- In a large skillet, melt 2 tablespoons of butter with 2 tablespoons of olive oil over medium heat.
- Add chicken breasts and cook until golden brown on both sides, about 4-5 minutes per side.
- Remove the chicken breasts from the skillet and set aside.
- In the same skillet, add the remaining 2 tablespoons of butter and 2 tablespoons of olive oil.
- Add the sliced mushrooms and cook until tender, about 5 minutes.
- Pour in the Marsala wine and chicken broth, scraping up any browned bits from the bottom of the pan.
- Return the chicken to the skillet and simmer for 10 minutes, or until the chicken is fully cooked and the sauce has thickened.
- Serve hot, spooning the mushroom sauce over the chicken.
Notes
- For a richer flavor, you can use a dry Marsala wine.
- Serve with pasta, mashed potatoes, or a simple green vegetable for a complete meal.
