Instructions

Cook the pasta: In a large pot, bring salted water to a boil and cook the pasta according to package instructions. Drain and set aside.

Prepare the sauce: In a large skillet, heat olive oil or butter over medium heat. Add the diced onion and cook until soft and translucent, about 4 minutes.

Add garlic and corn: Stir in the minced garlic and cook for 1 minute, then add the corn (if using frozen, make sure it’s thawed).

Make it creamy: Pour in the heavy cream and chicken broth, and bring to a simmer. Let it cook for 3-5 minutes until the sauce thickens slightly.

Combine with chicken and pasta: Stir in the shredded or diced cooked chicken, then add the pasta to the skillet. Toss everything together to coat in the creamy sauce.

Finish with Parmesan: Stir in the Parmesan cheese until melted and the sauce is smooth. Season with salt and pepper to taste.

Notes
You can substitute the heavy cream with half-and-half or milk for a lighter version.
For extra flavor consider adding a pinch of red pepper flakes or a squeeze of lemon juice to the sauce.
If you prefer you can use any protein of your choice, such as turkey or shrimp.
