Description

A comforting and creamy pasta dish made with tender chicken, sweet corn, and a rich creamy sauce. Perfect for a quick weeknight dinner or a special treat any time.


Ingredients

  • Pasta (your choice of shape)

  • Corn (fresh, frozen, or canned)

  • 1 onion (diced)

  • 2 cloves garlic (minced)

  • 1 cup heavy cream

  • 1/2 cup chicken broth

  • 1/2 cup Parmesan cheese (grated)

  • 1 tablespoon olive oil or butter

  • Salt and pepper (to taste)

  • Fresh herbs (optional, such as parsley or thyme)


Instructions

  1. Cook the pasta: In a large pot, bring salted water to a boil and cook the pasta according to package instructions. Drain and set aside.

  2. Prepare the sauce: In a large skillet, heat olive oil or butter over medium heat. Add the diced onion and cook until soft and translucent, about 4 minutes.

  3. Add garlic and corn: Stir in the minced garlic and cook for 1 minute, then add the corn (if using frozen, make sure it’s thawed).

  4. Make it creamy: Pour in the heavy cream and chicken broth, and bring to a simmer. Let it cook for 3-5 minutes until the sauce thickens slightly.

  5. Combine with chicken and pasta: Stir in the shredded or diced cooked chicken, then add the pasta to the skillet. Toss everything together to coat in the creamy sauce.

  6. Finish with Parmesan: Stir in the Parmesan cheese until melted and the sauce is smooth. Season with salt and pepper to taste.

  7. Serve: Garnish with fresh herbs (optional) and serve immediately.

Notes

You can substitute the heavy cream with half-and-half or milk for a lighter version.

For extra flavor consider adding a pinch of red pepper flakes or a squeeze of lemon juice to the sauce.

If you prefer you can use any protein of your choice, such as turkey or shrimp.
