Description

This creamy, comforting dish brings together all the delicious flavors of a chicken pot pie with the heartiness of pasta. Topped with a gooey layer of cheddar cheese, it’s a cozy meal that’s easy to make and perfect for the whole family.

  • 2 cups cooked chicken (shredded or diced)
  • 12 oz pasta (penne or rotini works well)
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1 cup chicken broth
  • 1 1/2 cups shredded cheddar cheese (divided)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter (melted)
  • Optional: 1 cup frozen peas or mixed vegetables (if you want to make it more like a classic chicken pot pie)

Instructions

  • Preheat your oven to 375°F (190°C).
  • Cook the pasta according to package instructions, drain, and set aside.
  • In a large mixing bowl, combine the cream of chicken soup, sour cream, chicken broth, garlic powder, onion powder, salt, and pepper. Stir until smooth and well combined.
  • Add the cooked chicken, cooked pasta, and melted butter to the bowl. If using, stir in the frozen peas or mixed vegetables. Mix everything together until evenly coated.
  • Transfer the pasta mixture to a greased 9×13-inch baking dish and spread it out evenly.
  • Top the pasta mixture with 1 cup of shredded cheddar cheese.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly and the edges are golden brown.
  • Let the pasta bake cool for a few minutes before serving.

Notes

  • For a crispier topping, you can broil the casserole for 2-3 minutes at the end of baking, but watch closely to avoid burning the cheese.
  • This recipe can easily be doubled for a larger crowd, or you can freeze half of it for later use.
  • Feel free to add other vegetables like carrots, corn, or green beans to make it even more like a classic chicken pot pie.
