- 1/2 cup all-purpose flour (for dredging)
- 2 large eggs, beaten
- 1 1/2 cups panko breadcrumbs

- 2 tbsp unsalted butter (for garlic butter sauce)
- 4 cloves garlic, minced
- 1 tbsp fresh parsley, chopped (for garnish)
- 1 tbsp lemon juice (optional, for a fresh finish)
Instructions
- Prepare the Chicken: Cut the chicken breasts in half horizontally to create thinner, more even pieces. Season both sides of the chicken with salt and pepper.
- Set Up Dredging Stations: In one shallow bowl, add the flour. In another bowl, beat the eggs. In a third bowl, place the panko breadcrumbs.
- Coat the Chicken: Dredge each piece of chicken first in flour, shaking off excess. Then dip in the beaten eggs, followed by the panko breadcrumbs, pressing gently to ensure the breadcrumbs stick evenly.
- Cook the Chicken: Heat the olive oil in a large skillet over medium heat. Once hot, add the breaded chicken pieces to the pan. Cook for 4-5 minutes per side, or until the chicken is golden brown and reaches an internal temperature of 165°F (74°C). Remove the chicken from the skillet and set aside.
- Make the Garlic Butter Sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
- Serve: Drizzle the garlic butter sauce over the crispy chicken and garnish with fresh parsley and a squeeze of lemon juice (if desired). Serve hot.

- For extra crispiness, you can bake the breaded chicken in a preheated oven at 400°F (200°C) for about 10 minutes after pan-frying.
- Feel free to use other seasonings like paprika or Italian seasoning in the breadcrumbs for additional flavor.
