Description

  • 4 tbsp unsalted butter, melted
  • 2 tbsp olive oil

  • 1 tsp dried thyme or rosemary (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, toss the halved baby potatoes with the melted butter, olive oil, garlic, salt, black pepper, paprika, and thyme or rosemary (if using) until evenly coated.
  • Spread the potatoes in a single layer on a baking sheet.
  • Roast for 35-40 minutes, flipping halfway through, until the potatoes are golden brown and crispy on the edges.
