- 2 lbs (900g) baby potatoes, halved
- 4 tbsp unsalted butter, melted
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1 tsp salt (or to taste)
- ½ tsp black pepper
- 1 tsp paprika (optional for color)
- 1 tsp dried thyme or rosemary (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the halved baby potatoes with the melted butter, olive oil, garlic, salt, black pepper, paprika, and thyme or rosemary (if using) until evenly coated.
- Spread the potatoes in a single layer on a baking sheet.
- Roast for 35-40 minutes, flipping halfway through, until the potatoes are golden brown and crispy on the edges.
- Garnish with chopped fresh parsley before serving.
Notes
- For extra crispiness, you can broil the potatoes for the last 2-3 minutes of cooking.
