Description

This quick and flavorful dish combines fresh mushrooms and spinach, sautéed to perfection with garlic and a touch of balsamic vinegar. Perfect as a side dish or light meal, it’s a healthy, savory option that’s ready in just 20 minutes!

Ingredients

Scale
  • 2 cups fresh mushrooms (sliced)
  • 2 cups fresh spinach (washed and chopped)
  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried thyme (or fresh thyme, optional)
  • 1 tablespoon butter (optional)
  • 1 tablespoon balsamic vinegar (optional)
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Prepare the Vegetables:
Clean and slice the mushrooms. Wash and chop the spinach.

  2. Sauté the Mushrooms:
Heat olive oil in a large skillet over medium heat. Add the sliced mushrooms and sauté for 5-7 minutes, stirring occasionally, until they release their moisture and begin to brown.

  3. Add Garlic and Spinach:
Add the minced garlic to the skillet and sauté for another minute until fragrant. Add the spinach and cook for 2-3 minutes, stirring occasionally, until the spinach wilts.

  4. Season the Dish:
Season with salt, pepper, and thyme (if using). Stir in butter and balsamic vinegar (optional) and continue cooking for another minute.

  5. Serve:
Transfer the sautéed mushrooms and spinach to a serving dish. Garnish with chopped parsley and serve immediately.

Notes

  • Optional Add-ins: You can add a splash of balsamic vinegar for a tangy twist, or a tablespoon of butter for extra richness.
  • Herb Variations: Fresh thyme can be substituted for dried thyme, or you can experiment with other herbs like oregano or basil.
  • Serving Suggestions: Serve this dish as a side or as a topping for pasta, rice, or even on top of toast.
