- 2 eggplants
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh basil
- 1 egg
- Salt and pepper to taste
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the eggplants lengthwise into 1/4 inch thick slices.
- In a bowl, mix together ricotta cheese, Parmesan cheese, basil, egg, salt, and pepper.
- Spread a spoonful of the cheese mixture on each eggplant slice and roll it up.
- Place the rolled eggplants in a baking dish, seam side down.
- Pour marinara sauce over the eggplant rolls and sprinkle shredded mozzarella cheese on top.
- Bake for 25–30 minutes, until the cheese is melted and bubbly.
- Serve hot, garnished with fresh basil if desired.
