  • 2 eggplants
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 1 egg
  • Salt and pepper to taste
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions

  • Preheat the oven to 375°F (190°C).
  • Slice the eggplants lengthwise into 1/4 inch thick slices.
  • In a bowl, mix together ricotta cheese, Parmesan cheese, basil, egg, salt, and pepper.
  • Spread a spoonful of the cheese mixture on each eggplant slice and roll it up.
  • Place the rolled eggplants in a baking dish, seam side down.
  • Pour marinara sauce over the eggplant rolls and sprinkle shredded mozzarella cheese on top.
  • Bake for 25–30 minutes, until the cheese is melted and bubbly.
  • Serve hot, garnished with fresh basil if desired.
