Description

These Grilled Baked Potatoes are the ultimate side dish for any BBQ or summer meal—crispy on the outside, soft and fluffy on the inside, with just the right amount of smoky flavor. Perfect on their own or loaded with your favorite toppings like sour cream, chives, bacon, or cheese!


Ingredients

  • 4 large russet potatoes

  • 2 tbsp olive oil

  • 1 tsp kosher salt

  • ½ tsp black pepper

  • Optional toppings: sour cream, shredded cheese, chives, bacon bits, butter


Instructions

  1. Scrub the potatoes clean and pat dry. Prick each potato a few times with a fork.

  2. Rub the potatoes with olive oil and sprinkle with salt and pepper.

  3. Preheat your grill to medium-high heat (around 400°F / 200°C).

  4. Wrap each potato tightly in aluminum foil.

  5. Place foil-wrapped potatoes directly on the grill grates. Close the lid and cook for 45–60 minutes, turning occasionally, until fork-tender.

  6. Remove from grill, carefully unwrap, and serve as-is or slice open and load up with your favorite toppings.

Notes

For extra flavor, add a clove of garlic or fresh herbs (like rosemary or thyme) inside the foil.

Want crispy skin? Unwrap the potatoes for the last 10 minutes and place them directly on the grill.

Great for prepping ahead: par-bake the potatoes in the oven, then finish on the grill for a quick side.
