Grilled Baked Potatoes are a smoky, crispy-skinned twist on the classic oven-baked version. Perfectly fluffy on the inside and lightly charred on the outside, these potatoes are a crowd-pleasing side dish for any summer BBQ or weeknight dinner. Just top with butter, sour cream, cheese, or your favorite toppings!
Ingredients

4 medium russet potatoes

2 tablespoons olive oil

Kosher salt, to taste

Black pepper, to taste

Optional toppings: butter, sour cream, shredded cheese, chives, bacon bits
Instructions

Prep the potatoes: Scrub potatoes clean and pat dry. Pierce each potato a few times with a fork.

Coat and season: Rub each potato with olive oil and sprinkle generously with salt and pepper.

Wrap or not (your choice):

For softer skins: Wrap each potato in foil.

For crispier skins: Grill directly without foil.

Grill:

Preheat the grill to medium heat (around 400°F / 200°C).

Place potatoes on the grill, close the lid, and cook for 45–60 minutes, turning every 15–20 minutes to ensure even cooking.

Potatoes are done when a fork or skewer slides in easily.

Serve: Remove from grill, carefully unwrap (if using foil), and let cool for a couple minutes. Slice open and add your favorite toppings.
Notes
You can partially microwave the potatoes for 5–7 minutes beforehand to reduce grilling time.
Great with grilled meats, burgers, or as a vegetarian main with hearty toppings.
Yukon Gold potatoes also work well for a creamier texture.
