  • 1 cup shredded cheddar cheese
  • 1 small onion, diced
  • 1/2 cup diced tomatoes
  • 1/2 cup sliced black olives
  • 1/2 cup chopped green onions
  • 1/2 cup sour cream (for topping)

  • Jalapeños (optional, for topping)

Instructions

  • Preheat the Oven:
    Preheat your oven to 400°F (200°C).
  • Cook the Ground Beef:
    In a skillet over medium heat, cook the ground beef until browned and crumbled. Drain any excess fat. Add taco seasoning and water according to package instructions (usually 1/2 cup water and the seasoning mix). Stir to combine and simmer for 5 minutes, then remove from heat.
  • Prepare the Tortillas:
    Place the flour tortillas on a baking sheet. Lightly brush each tortilla with a bit of olive oil or butter for extra crispiness. Bake for 5-7 minutes, or until golden and crispy.
  • Assemble the Pizza:
    Once the tortillas are crispy, spread a thin layer of refried beans (if using) on each tortilla. Then, evenly distribute the cooked taco beef over the tortillas. Sprinkle both mozzarella and cheddar cheeses generously on top.
  • Bake the Pizza:
    Return the assembled pizzas to the oven and bake for 5-7 minutes, or until the cheese is fully melted and bubbly.
  • Add Fresh Toppings:
    Once out of the oven, sprinkle with diced onions, tomatoes, black olives, and green onions. Add any other optional toppings, such as jalapeños or fresh cilantro.
