Ingredients
- 2 tablespoons oil
- 3 tablespoons unsalted butter, divided
- 1 pound mushrooms (sliced)
- 2 cloves garlic (minced)
- ¼ teaspoon dried thyme
- ¼ teaspoon dried rosemary
- Salt and pepper, to taste
- 3 tablespoons white wine or broth (your choice)
- 1 teaspoon Worcestershire sauce
- 1 tablespoon fresh parsley (chopped)
Instructions
-
Cook the Mushrooms:
Heat 2 tablespoons oil and 2 tablespoons butter in a large skillet over medium-high heat. Add 1 pound of sliced mushrooms and cook, stirring occasionally, for about 5 minutes until they begin to soften. -
Add Aromatics:
Reduce heat to medium and stir in 2 cloves minced garlic, ¼ teaspoon dried thyme, and ¼ teaspoon dried rosemary. Season with salt and pepper to taste. Cook for 2–3 minutes until the garlic is fragrant. -
Deglaze:
Add 3 tablespoons white wine (or broth) and cook until the mushrooms are tender and the liquid has mostly evaporated, about 3–5 minutes. Stir in 1 teaspoon Worcestershire sauce and mix well. -
Finish:
Add the remaining 1 tablespoon butter and sprinkle with 1 tablespoon fresh chopped parsley. Stir until the butter is melted and the mushrooms become glossy. Serve immediately and enjoy!
Notes
-
Ingredient Notes:
- Mushrooms: You can use cremini, button mushrooms, or a mix of both.
- Oil & Butter: Using both helps with flavor and browning.
- White Wine: A dry wine like Sauvignon Blanc or Pinot Grigio works best. You can substitute with broth if preferred.
- Worcestershire Sauce: For a vegetarian option, substitute Worcestershire sauce with soy sauce.
-
Recipe Tips:
- Don’t Overcrowd the Pan: Make sure to use a large pan to avoid steaming the mushrooms.
- Golden Sear: Let the mushrooms sit undisturbed for a few moments to ensure they brown nicely.
- Season Early: Adding salt early helps draw out moisture from the mushrooms. Taste and adjust seasonings as needed.
- Fresh Herbs: If you swap dried thyme or rosemary for fresh, use double the amount.
-
Storage Tips:
- Refrigerate: Store leftovers in an airtight container for up to 1 day.
- Reheat: Reheat in a skillet, adding a little butter or broth if necessary, and heat to at least 165°F before serving.
