This Shrimp Scampi Pasta Bake is a deliciously indulgent and comforting dish. Tender shrimp, creamy butter, garlic, and zesty lemon come together in a rich, flavorful sauce that coats pasta perfectly. Topped with parmesan cheese and fresh parsley, this bake is the ultimate combination of savory and satisfying. Perfect for a cozy dinner or special occasion!

Ingredients

Scale
  • 1 lb large shrimp, peeled and deveined
  • 12 oz short pasta (such as penne, rotini, or ziti)
  • 4 tbsp butter
  • 4 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1/2 cup grated parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  • Cook the pasta according to package instructions, then drain and set aside.
  • In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté until golden and fragrant (about 1-2 minutes).
  • Add the shrimp to the skillet and cook for 3-4 minutes until they turn pink and are cooked through.
  • Stir in the fresh lemon juice and season with salt and pepper to taste.
  • Add the cooked pasta to the skillet and toss everything together until the pasta is coated with the buttery shrimp mixture.
  • Transfer the pasta and shrimp mixture to the prepared baking dish and sprinkle the top with grated parmesan cheese.
  • Bake in the preheated oven for 15-20 minutes, until the top is golden and the dish is bubbly.
  • Remove from the oven and sprinkle with fresh parsley before serving.

Notes

  • For extra creaminess, you can add a splash of heavy cream or a bit of cream cheese to the sauce.
  • Feel free to swap the pasta for a gluten-free option if needed.
  • You can also add extra vegetables like spinach or cherry tomatoes for added color and flavor.
