  • 8 oz linguine
  • 2 boneless, skinless chicken breasts
  • 12 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook linguine according to package instructions. Drain and set aside.
  • Season chicken breasts with Cajun seasoning on both sides.
  • In a large skillet, heat olive oil over medium-high heat. Add chicken breasts and cook until no longer pink in the middle, about 6-7 minutes per side. Remove from skillet and let rest before slicing.
  • In the same skillet, add sliced bell peppers, onion, and minced garlic. Sauté until the vegetables are tender, about 4-5 minutes.
  • Pour in heavy cream and Parmesan cheese. Stir until cheese is melted and the sauce becomes creamy.
  • Add cooked linguine to the skillet and toss to coat with the creamy sauce.
  • Slice the cooked chicken breasts and add them to the pasta, tossing to combine.
  • Serve hot, garnished with chopped fresh parsley.

Notes

  • For extra spice, you can increase the amount of Cajun seasoning or add a pinch of cayenne pepper.
  • You can substitute chicken breasts with chicken thighs for a juicier option.
  • Add a squeeze of fresh lemon juice before serving to brighten the flavors.
