- 8 oz linguine
- 2 boneless, skinless chicken breasts
- 1–2 tbsp Cajun seasoning
- 1 tbsp olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook linguine according to package instructions. Drain and set aside.
- Season chicken breasts with Cajun seasoning on both sides.
- In a large skillet, heat olive oil over medium-high heat. Add chicken breasts and cook until no longer pink in the middle, about 6-7 minutes per side. Remove from skillet and let rest before slicing.
- In the same skillet, add sliced bell peppers, onion, and minced garlic. Sauté until the vegetables are tender, about 4-5 minutes.
- Pour in heavy cream and Parmesan cheese. Stir until cheese is melted and the sauce becomes creamy.
- Add cooked linguine to the skillet and toss to coat with the creamy sauce.
- Slice the cooked chicken breasts and add them to the pasta, tossing to combine.
- Serve hot, garnished with chopped fresh parsley.
