Description

Sweet Baby Ray’s Crockpot Chicken is a tangy, sweet, and slightly spicy chicken recipe that takes minimal effort. Tender chicken breasts slow-cooked in a flavorful blend of barbecue sauce, vinegar, and spices make for a delicious meal served over rice, in sandwiches, or as a stand-alone dish. This simple recipe is a crowd-pleaser!

Ingredients

Scale
  • 46 chicken breasts
  • 1 bottle Sweet Baby Ray’s barbecue sauce
  • ¼ cup vinegar
  • 1 teaspoon red pepper flakes
  • ¼ cup brown sugar
  • 1 teaspoon garlic powder

Instructions

  • Prepare the Chicken: Place the chicken breasts in the bottom of the Crock Pot.
  • Combine the Sauce Ingredients: In a medium bowl, combine the Sweet Baby Ray’s barbecue sauce, vinegar, red pepper flakes, brown sugar, and garlic powder. Mix until well combined.
  • Pour the Sauce: Pour the sauce mixture over the chicken breasts, ensuring that they are fully covered.
  • Cook: Cover the Crock Pot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  • Shred the Chicken: Once the chicken is cooked, shred it using two forks and stir it back into the sauce.
  • Serve: Serve the shredded chicken over rice, on sandwiches, or with your favorite sides.

Notes

  • Adjust the amount of red pepper flakes to your desired spice level.
  • You can substitute chicken thighs for a juicier result.
  • If the sauce is too thick after cooking, add a bit of water or chicken broth to thin it out.
