For the Salmon Bites:

  • 1 lb salmon fillets (skin removed, cut into bite-sized pieces)
  • 1 cup panko breadcrumbs (for extra crunch)

  • 2 large eggs, beaten

  • Olive oil, for frying

For the Bang Bang Sauce:

  • ½ cup mayonnaise
  • 3 tbsp sweet chili sauce
  • 1 tbsp sriracha sauce (or adjust to taste for heat)
  • 1 tsp honey
  • 1 tsp rice vinegar
  • 1 tsp garlic powder

Optional Garnishes:

  • Chopped green onions
  • Sesame seeds
  • Fresh cilantro

Instructions

  • Prepare the salmon bites: Cut the salmon fillets into bite-sized pieces, about 1-inch cubes. Season with salt and pepper to taste.

  • Bread the salmon: Set up a breading station with three bowls. In the first bowl, place the flour. In the second bowl, beat the eggs. In the third bowl, place the panko breadcrumbs. Dip each piece of salmon into the flour, then the egg, and finally coat it in the panko breadcrumbs, pressing lightly to ensure an even coating.

  • Fry the salmon: Heat olive oil in a large skillet over medium-high heat. Once hot, carefully add the salmon bites in batches (don’t overcrowd the pan). Cook for 2-3 minutes per side, or until golden brown and crispy. Remove from the skillet and drain on paper towels to remove excess oil.

  • Make the bang bang sauce: In a small bowl, combine the mayonnaise, sweet chili sauce, sriracha sauce, honey, rice vinegar, and garlic powder. Stir until smooth and well combined.

  • Coat the salmon bites: Once all the salmon bites are cooked, transfer them to a large bowl. Drizzle the bang bang sauce over the salmon bites and toss gently to coat.

  • Serve: Transfer the coated salmon bites to a serving plate and garnish with chopped green onions, sesame seeds, or fresh cilantro for a pop of color and flavor.

Notes

  • Spice Level: Adjust the amount of sriracha in the sauce to control the heat. For a milder version, use less or omit the sriracha.
