Ingredients

2 chicken breasts, boneless and skinless

1 cup rice (white or brown)

1 1/2 cups pineapple chunks (fresh or canned)

1/2 cup chicken broth

1 tablespoon olive oil

1/4 cup soy sauce

1 tablespoon honey

1 teaspoon grated ginger

1 garlic clove, minced

1/2 red bell pepper, diced

1/4 cup chopped green onions

1/4 cup cilantro (optional, for garnish)

Instructions

Cook the rice according to package instructions and set aside.

In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper, then cook until golden brown and cooked through, about 6-8 minutes per side. Remove from the skillet and set aside.

In the same skillet, add garlic, ginger, and red bell pepper. Sauté for 2-3 minutes until fragrant.

Add pineapple chunks, soy sauce, honey, and chicken broth to the skillet. Bring to a simmer and cook for 5 minutes, allowing the sauce to reduce slightly.

Slice the cooked chicken into strips and add it back to the skillet. Stir to coat the chicken in the pineapple sauce.

Serve the chicken and pineapple mixture over the cooked rice. Garnish with green onions and cilantro.
Notes
For added heat, you can add red pepper flakes or a splash of hot sauce to the sauce.
If you prefer a lighter lighter version, use brown rice or cauliflower rice as a base.
You can also add other tropical fruits like mango for extra flavor.
