A sweet and savory tropical-inspired dish that combines juicy chicken with the refreshing flavor of pineapple and perfectly cooked rice. This vibrant, colorful meal is a perfect balance of flavors, bringing the taste of a beachside paradise to your dinner table!


Ingredients

  • 2 chicken breasts, boneless and skinless

  • 1 cup rice (white or brown)

  • 1 1/2 cups pineapple chunks (fresh or canned)

  • 1/2 cup chicken broth

  • 1 tablespoon olive oil

  • 1/4 cup soy sauce

  • 1 tablespoon honey

  • 1 teaspoon grated ginger

  • 1 garlic clove, minced

  • 1/2 red bell pepper, diced

  • 1/4 cup chopped green onions

  • 1/4 cup cilantro (optional, for garnish)

  • Salt and pepper to taste


Instructions

 

  • Cook the rice according to package instructions and set aside.

  • In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper, then cook until golden brown and cooked through, about 6-8 minutes per side. Remove from the skillet and set aside.

  • In the same skillet, add garlic, ginger, and red bell pepper. Sauté for 2-3 minutes until fragrant.

  • Add pineapple chunks, soy sauce, honey, and chicken broth to the skillet. Bring to a simmer and cook for 5 minutes, allowing the sauce to reduce slightly.

  • Slice the cooked chicken into strips and add it back to the skillet. Stir to coat the chicken in the pineapple sauce.

 

  • Serve the chicken and pineapple mixture over the cooked rice. Garnish with green onions and cilantro.

Notes

For added heat, you can add red pepper flakes or a splash of hot sauce to the sauce.

If you prefer a lighter lighter version, use brown rice or cauliflower rice as a base.

You can also add other tropical fruits like mango for extra flavor.
