- 1 lb ground turkey
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1/4 cup chopped fresh sage
- 1 cup pumpkin puree
- 1/2 cup chicken broth
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix together the ground turkey, breadcrumbs, Parmesan cheese, egg, and chopped sage. Season with salt and pepper.
- Shape the mixture into meatballs and place them on a baking sheet.
- Bake in the preheated oven for 20-25 minutes, or until cooked through.
- In a saucepan, combine the pumpkin puree and chicken broth. Cook over medium heat, stirring occasionally, until heated through and smooth.
- Serve the turkey meatballs with the pumpkin sage sauce poured over them.
Notes
- You can add a little cream to the pumpkin sauce for extra richness.
- For a spicy kick, sprinkle some red pepper flakes into the pumpkin sage sauce.
- If you prefer a meat-free version, substitute the turkey with plant-based ground meat.
