Description
This easy banana bread is a moist and flavorful treat, perfect for breakfast, a snack, or dessert. Made with ripe bananas, it’s quick to prepare and deliciously comforting.

- 1/2 cup unsalted butter (at room temperature)
- 1 cup granulated sugar
- 2 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3–4 medium bananas (or 2 large bananas)
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line two 8×4-inch bread pans with parchment paper or grease them well.
- In a medium-sized bowl, mash the bananas until well mashed and set aside.
- In a separate bowl, cream the butter and sugar together.
- Add the eggs and continue creaming until the mixture is well combined.
- Add the flour, baking soda, and salt, mixing until combined.
- Stir in the mashed bananas and vanilla extract, mixing until the bananas are fully incorporated.
- Divide the batter evenly between the two bread pans.
- Bake for 35-40 minutes, or until the top is puffed and golden brown and a cake tester comes out clean.
- Allow the bread to cool for 5-10 minutes in the pan, then remove it from the pans and cool on a wire rack.
- Serve warm, at room temperature, or chilled.
Notes
- You can make the bread in one 9×5 loaf pan. Bake at 350°F (175°C) for 35 minutes, then lower the temperature to 325°F (163°C) and bake for an additional 20-25 minutes.
- If the outside of the bread is getting too dark, tent it with foil to prevent over-browning.
