- 3 medium-sized extra ripe bananas (mashed, about 1 1/4 to 1 1/2 cups)
- 1 cup white granulated sugar
- 1/3 cup canola oil
- 2 large eggs (room temperature)
- 1 teaspoon vanilla extract
- 1 1/3 cups all-purpose flour (sifted)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Spray a 9×5-inch loaf pan with nonstick spray and line the bottom and two sides with parchment paper.
- In a large bowl, mash the 3 extra ripe bananas with a fork. Add the sugar and mix well.
- Stir in the eggs, vanilla extract, and canola oil.
- Sift the flour, baking soda, and salt together. Add the sifted dry ingredients to the banana mixture and stir just until combined.
- Pour the batter into the prepared loaf pan.
- Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
- Let the banana bread cool completely in the pan before removing.
Notes
- Mix-ins: You can add 1 cup of semisweet mini chocolate chips, 1 cup of chopped pecans, or chopped walnuts for extra flavor and texture.
- If your bananas aren’t quite ripe enough, you can speed up the ripening process by placing them in a paper bag for a few days.
